In the spirit of increasing my super-food intake—and indulging my sweet tooth— I tinkered around with simple recipes which not only serve as dessert, but add a punch of antioxidants to my diet. These pops contain organic sugar (which is definitely better for you), but if you wanted to avoid the sugar rush feel free to leave it out. I love the combination of coconut and citrus in general, but this frosty treat offers much more in the way of vitamin C than your run of the mill artificially flavored non-sense.
14 oz of Coconut Cream (Chilled in the icebox for at least 30 minutes)
½ cup Shredded Coconut
½ cup Organic sugar
5 Mandarin Oranges
1 Tsp Vanilla Extract
2 Tbsp Chia Seeds
2 Tsp Moringa Leaf Powder (or you could use spirulina if you prefer)
In the food processor pop in the chilled coconut cream and blend until smooth and fluffy. Add vanilla extract, sugar, and chia seeds first, blend for a few seconds. Next, add the moringa powder, shredded coconut and mandarins and blend for about a minute until completely pureed.
Fill your popsicle molds, insert the sticks. I prefer to use wooden popsicle sticks rather than the plastic tops that came with the set, but that’s because I prefer the nostalgic feeling. Allow the molds to rest for at least 2-3 hours before eating.
Adding the extra super-food powder is optional, this recipe is delicious without it as well. As always, please use organic ingredients because you deserve the best!
